Ett riktigt härligt recept på tacos ancho style med hemgjorda majstortillas. Du gör tortillas av majsmjöl, vetemjöl, olja och vatten. Servera med grönsaker och en utsökt salsa av bland annat mango, tomat och sambal oelek. Lyxigt fredagsmys!

Gör laktosfri: använd laktosfri gräddfil.
Gör mjölkproteinfri: ersätt gräddfil med mjölkfritt alternativ, t ex Sour Supreme (innehåller soja).

2015-03-07Disaster! The meat sauce is very underseasoned. I increases the Ancho by 50% and it was still family friendly. The mango salsa was very liquid despite draining the mango. I think fresh mango is the only way to go, and to peel and seed the tomatoes. The flavour however was good. But the real problem were the tortillas. After learning more from other sources it turns out you can't roll out corn tortillas. You either develop years of experience and pat them between your hands, or you use a Tortilla Press. Doing it the way described in the recipe cannot work. All I had were ugly fragments of bread that were too thick. The average home cook without a passion for Mexican food is sadly better off buying tortillas from the store.
